Course Overview
The qualification is designed to develop skills and recognise achievement in the safe and effective use, knowledge and understanding of professional knife skills in food operations.

The course covers the safe use of food knives, knife sharpening and maintenance and relevant knife skills in butchery, meat and poultry operations, pastry, dough and bakery operations.
Assessment of occupational and underpinning knowledge through questioning and evidence of performance
This qualification supports vocational development for those who need to demonstrate knife skills in food processing operations.
Learners do not require any prior qualifications or food skills experience to take this qualification.
Working in food manufacturing or processing roles.
